RECIPE OF THE WEEK: ROASTED CAULIFLOWER STEAKS

RECIPE OF THE WEEK: ROASTED CAULIFLOWER STEAKS
  • 1 tablespoon lemon juice
  • 2 cloves garlic, crushed with a press
  • 1 head cauliflower
  • 2 tablespoons fresh parsley, finely chopped, for serving

Preheat the oven to 375°F. Line a baking sheet with parchment paper. 

Combine lemon juice and garlic in a small bowl. Cut center of head of cauliflower lengthwise into 3/4-inch-thick slices. Arrange on the prepared baking sheet in a single layer. Cut remaining cauliflower into 1-inch-thick pieces and scatter around cauliflower steaks. Brush cauliflower with lemon juice mixture. Roast 40 minutes or until golden and tender.   Sprinkle with parsley and serve.

What great fun we had at our 2016 Celebration Fun Run!  For some participants, this was their first 5K Fun Run.  For others, a training run for a half marathon that was one week away.  All ages, sizes, fitness levels are welcome in the Land of Mojo.  But, did you know, your unlimited membership includes all of these things:

The New Year is almost here!  Tonight we will be ringing in 2016, and begin to start thinking about packing away our holiday decorations (if you have not done so already).  

Now is a great time to really look at all the decorations that you have, from tree ornaments to center pieces, and decide if you really really love it and want to continue to live with it.  We all tend to accumulate more than what we truly need, so take a close look.  Make room for sentimental items that invoke wonderful memories.  Every year, we hang my husband's grandmother's hand painted ornaments on our tree.  They don't match, are pink and blue, don't sparkle anymore, but our tree would not be complete without a few of these precious ornaments that are well over 100 years old.
