Crockpot Wednesday: Filipino Chicken Adobo Rice

Crockpot Wednesday: Filipino Chicken Adobo Rice

I've mentioned before that I'm half Filipino but am pretty ignorant about Filipino food. My mom never learned to cook much Filipino food and so the only things I can even remember her making are lumpia, pancit, and adobo.

Filipino food is definitely its own thing. Being situated in southeast Asia and made up of over 7,000 islands, it has often been the stomping ground of invaders. Thus the influences over the centuries include Chinese, Japanese, Spaniards, Americans, and others. All of these influences mish-mash together to create unique dishes  - the true example of fusion cooking.

One notable flavor trait of Filipino cooking is their mix of salt/sour. Adobo is a perfect example. Adobo is considered the national dish of the Philippines. It is usually made with either pork or chicken. I prefer the chicken, and it's important that you use chicken thighs, not breasts. The breasts will be too dry.

El Dorado Board authorizes funds for El Dorado Forebay Dam project

El Dorado Board authorizes funds for El Dorado Forebay Dam project

The El Dorado Irrigation District (District) Board of Directors has authorized funding in the amount of $640,117 to continue the design study and begin environmental review for the El Dorado Forebay Dam Remediation and Enlargement Project. The El Dorado Forebay, located in Pollock Pines, is an off-stream reservoir that both regulates drinking water supplies to District customers and the water that flows into the El Dorado Powerhouse.

The El Dorado Forebay Dam is 89 years old and does not meet modern dam safety engineering standards. The proposed remediation project will increase public safety by providing further protection of downstream residents, life, and property.

The design and environmental analysis process is expected to be completed in 2012 with construction beginning as early as 2013 or more likely 2014.

Barbono release at Toogood Winery

Barbono release at Toogood Winery

If you love to try new wines like me, then you won't want to miss this.Toogood Estate Winery is releasing their new Barbono this month.

Toogood's Barbono marries the white pepper spiciness and blackberry-jam fruit of Charbono with the violet, black cherry and minerally aromas of Barbera. Aged in oak to add complexity and depth. I haven't tried it yet, but I'm told that on the palate you will enjoy the bold flavors of blueberry and plum fruit.

Their Barbono is a fusion of 56 percent Barbera and 44 percent Charbono.

This red wine pairs well with spaghetti, lasagna and most hearty pasta dishes. Especially delightful with lamb shanks, teriyaki chicken or flank steak.

Recipe: Guacamole Omelette

Recipe: Guacamole Omelette

Earlier this week I was working on a new crepe recipe, which got me thinking about some of my go-to recipes in the breakfast-for-dinner department.  Though there are a couple sandwich & crepe recipes, I realized that most fall into the omelette category.  Suddenly, I was overcome with an intense desire to have a giant omelette, and instantly regretted the fact that I'd just used my only omelette filling-worthy ingredients in the crepes.

D.A. objects to Garrido competency hearing delay

PLACERVILLE, CA (AP) -- Prosecutors have objected to a defense request to postpone the competency hearing for the Antioch man charged with kidnapping Jaycee Dugard and fathering her two children. READ: D.A.'s motion

In legal papers posted Monday, El Dorado County District Attorney Vern Pierson says Phillip Garrido's public defender has had enough time to prepare for the Feb. 28 hearing where a jury will decide if Garrido is mentally fit to stand trial.

Pierson called the effort to delay the proceedings "astounding" and "unconscionable."

Deputy Public Defense Susan Gellman asked last week to push back the proceedings so she can inspect evidence and consult a jury expert on whether she should try to have the hearing moved elsewhere in California because the case has attracted so much publicity.
